Prunes sauce served with meats

There are only few ingredients you will need:

  • 100 grams of prunes
  • 2 cups of meat broth
  • a teaspoon of potato starch
  • a spoonful of fine flour
  • salt and pepper

First, remove stones from the dried plums and cut them into thin strips. Place them in a pot, pour meat broth in and simmer until the fruit is completely dissolved. This will take about 10 or 15 minutes. Use medium heat and stir regularly, the sauce tends to stick to the bottom towards the end so, stir regularly.

Pour the mixture into the sauce and cook for few more minutes until it thickens. Taste it and if necessary, add salt and pepper.

A recipe for those impatient. Use plum jam

If you don’t have prunes at home or if you are really in a hurry then use about 8 teaspoons of good quality plum jam instead of prunes. Jam will boil quickly allowing you to shorten the preparation time down to less than 15 minutes. Now you have the sauce ready for any meat dish. The taste and aroma will add a magic touch to your dishes. Try it!

For those of you who prefer more tangy and stronger flavour try adding a pinch of clove, cinnamon or ginger. That will add an exotic touch to it.
