Do you freeze fruits and vegetables to keep them fresh? Of course, you do and we all know that frozen food last much longer. Some of you may think that freezing destroys vitamins and the good stuff but that is not true for all fruits. Blueberries are one of those exceptions.
Blueberries contain a lot of vitamins and antioxidants that our body needs and thanks to freezing, our system is able to get much more nutrients than if we consumed them fresh. That is at least according to the research done by the head of the department at the South Dakota State University, Marina Pluba. So, what does freezing blueberries actually do and what are the benefits? We shall tell you in the following lines.

If you freeze blueberries, for a short time or even long time, the low temperatures penetrate deep into the structure of the fruit. This breaks the tissue, and compounds called anthocyanins become easily available and also digestible. Even after 6 months of freezing these nutrients are still availableso our bodies can reap the benefits for longer period of time.
