How to process blackberries correctly

If your blackberry harvest was so great this year that you don’t know what to do with it, you may appreciate few tips. Sure, you can use blackberries in the most common way and prepare various desserts, fruit cocktails or try those new “guaranteed” recipes you got from the Internet. Well, below you will find three recipes you can try and have a great time while doing so! You do not need to freeze them all!

Pectin-free blackberry jam

This jam contains no preservatives so you need to keep it in your fridge where it will last for several months. You can add some preservatives if you wish to make it last longer. You will only need two ingredients: blackberries and sugar in a ratio of 4:1. You may also add lemon juice, usually one spoonful for about 4 cups of blueberries, to enhance the taste a bit. Mash or blend blackberries. If you do not want to have seeds in your jam pass the pulp through a sieve. Add sugar. Cook it for about twenty minutes, until you achieve gel-like consistency. Add lemon juice. Pour jam into clean glasses, close them tightly with a lid and turn them upside down. When they cool down, put them in a refrigerator or in a cool and dark place.

Blackberry soup

Kids love this soup! Finally, a food that you don’t have to argue with the kids about! Mix four cups of blueberries with two cups of water, add half a lemon (slices) and a quarter cup of sugar. Now, you add spices: a two and a half centimetre long piece of cinnamon and three whole cloves.Cook the mixture until the blackberries are soft. Pour in half a cup of cream and mix well. It is a cold soup so let it cool first. Garnish with fresh blueberries and serve it.

Blackberry pie with crust

Preheat oven to 180 °C. Prepare a 20×20 cm baking pan (or a 22.5 cm round baking pan). Mix one cup of powdered sugar, one cup of flour, one and half teaspoon of baking powder and a half teaspoon of salt. Add a half cup of milk and a half cup of melted butterin and mix it well. Pour the mixture into the prepared baking pan and sprinkle with three cups of fresh blackberries. Add about a half cup of granulated sugar on the top and bake for 50 to 60 minutes.
