High-quality chestnuts is a must
Chestnuts fallen under trees are best. If you know where a good sweet chestnuts tree is, go for it. Unfortunately, they are not many of them. Buying high-quality chestnuts in a supermarket may not be easy because chestnuts sold in stores are usually old, or they may have been sitting on shelves for a long time. You should also make sure that chestnuts are not deformed in any way. If you can squeeze a chestnut in your hand it is not good and if you notice wrinkles, it means it is old, dry and no longer good.

Roasting
Roasting is easy. First, you need to preheat oven to 200 °C. While the oven is heating up you need to prepare chestnuts for roasting. Take a knife and make a shallow cut in the shape of a cross. Do it on the round side of the chestnut. Serrated knife works best. The cross cut allows steam to escape while roasting. Open the oven several times to let moisture out. Roast for about 20 minutes.

Cover with a towel
When done cover chestnuts with a towel. This will keep steam in and peeling will be easier. Do this while chestnuts are still hot. Cold chestnuts do not taste good. Get rid of the inner skin too, which is often bitter.
