Quick and simple recipe how to use fallen apples

You collect fallen apples from under apple trees throughout the season as you should and sometimes you just have too many of fallen apples. They are usually full of warms, but those that have fallen down because of strong winds are healthy and you should not throw them away.

So, collect them and bring them home. Here are a few examples how you can process fallen apples. Keep in mind that fallen apples cannot be stored for long.

Apple compote

Ingredients:

  • 6-8 large apples
  • half a cinnamon roll
  • 6 cloves
  • 1 star anise
  • 1 vanilla sugar
  • 1 tablespoon of sugar or more, depending on your taste and how sweet apples you have
  • lemon juice from half a lemon (optional)

Procedure:

  1. Peel apples, remove cores and any bruised or wormy pieces. Cut apples into quarters or eighths. Squeeze lemon over them and mix well. Especially if they turn brown quickly.
  2. Pour about ¾ l of water into a wide pot, add all the spices and sugar, bring it to boil and add apples. They do not have to be all submerged, but if necessary, you may add water. Cook for a while and stir occasionally.
  3. Use a skewer the check if they are soft enough. As soon as the skewer slides in and out smoothly, they are cooked enough. Apples cannot be too soft or mushy. When you turn off the heat the cooking process still continues.
  4. Remove the pot and let it cool (put it in a pantry for example).
  5. Eat lukewarm or cold as a dessert.
  6. This compote is not intended for long-term storage, but in a closed container in a refrigerator it will remain fresh for several days. It is wonderful and refreshing especially, when chilled.

Canned grated apples

Ingredients:

  • apples in any quantity

Procedure:

  1. Peel apples (optional) and grate them on a coarse grater (use a food processor for larger quantities).
  2. Put apples in jars or glasses, preferably larger ones. You need to sterilize glasses and lids first.
  3. Close jars with lids and cook for 20 minutes at 180 °C. When done, remove hot jars from the pot, cover them with a towel and let them cool – until the next morning.
  4. Store in your pantry like other canned food, preferably in dark.
  5. Use apples in various dessert recipes or as a filling for buns or dumplings. Strudel is an obvious candidate.
