Potato storage tricks
There are many kinds of potatoes but the most typical variety is (Solanum tuberosum), which does not sound appealing at all but that is okay. Potatoes belong to the Solanaceae family.
People have been growing potatoes for centuries and mainly because they are undemanding plants and contain many vitamins and beneficial substances. These include iodine, folic acid, potassium, magnesium, calcium, vitamin C, copper, sodium, B vitamins, phosphorus, iron, and others.
The lemon trick
There are many handy tips to improve potato storage and to make them last longer. But there are some tricks people do not know about. One of them is the use of ordinary lemons. Put two or three lemons into a large bag of potatoes or into a crate.

You do not need to use lemons in perfect condition. They may be shrivelled and little bit on the dry side (but make sure they do not show any signs of rot or mould of course). So, how does this trick work? The secret is called phytoncides which destroy various pathogens and lemons release those and protect potatoes from rot and mould, etc. Isn’t that great?
Can you recognize different potato varieties?
If you have yellow and orange potatoes, you should know that they contain much more antioxidants than regular brownish tubers. These mainly includes carotenoids and flavonoids. Another useful information says that new potatoes have more vitamin C than old ones. If you store potatoes correctly, they will retain all important substances for a long time.
If potatoes turn sweet, do not despair. Boil them in milk or with various spices, and the sweetness will disappear.
