How to reduce meat gravy and get the most delicious taste

If you want to make a tasty and delicious sauce you need to know how to thicken meat sauce properly. Great meat gravy is something that goes well with potatoes or dumplings, a something you love to dip bread in, for example.

Meat juice simply comes out of the meat during roasting or baking but it would be a shame if it ends up soaking the baking sheet only. You should always use the leftovers from meat baking by turning it into a sauce.

Thickening takes time

To make sauce as tasty as possible, you cannot rush the thickening process. First, let it cool down a bit, and then you may add stuff. In the meantime, prepare a saucepan and roux. Pour half of the leftover meat juice in the saucepan, whisk well, and only then add the rest. Wisk again.

You may use potato starch too

If you do not want to make a traditional roux, you may use potato starch instead. In Europe we know it as Solamyl. Follow the same steps and whisk it in carefully. Do not add too much. If you overdo it, you will have a gel-like substance and not very tasty. Here are some other tricks that you may use. Chose the ones that inspire you most. They work great!

Meat juice from baking

You make the sauce right on the baking pan. A green pepper sauce is very popular with steaks.

Green pepper sauce

Ingredients:

  • pickled green pepper – 2 tablespoons
  • 1 tablespoon of butter
  • white wine – 50 ml
  • whipping cream – 200 ml
  • strong beef broth – 200 ml
  • plain flour – 1 tablespoon

Pour the fat into a separate container and get rid of meat crumbs. Add butter, heat it up, add peppercorns and fry quickly. Sprinkle with flour on top and stir to make a pale roux. Dilute it with broth and wine and cook for 10 minutes. Add the cream and cook again for 5-10 minutes until the sauce thickens. Season with salt and pour over steaks.
