The watermelon season is here and we all love it. This wonderful juicy fruit is almost synonymous with summer and refreshment, but have you ever wondered what to do with all the rinds? Is there a better way to use them? We all throw rinds in the trash but only few of us put them in a composter and that is a shame because watermelon rinds are full of nutrients. Read on and you shall find out.

Plenty of nutrients

Yes, and the following is only a brief list:

  • vitamins A and C,
  • vitamin B 6,
  • zinc,
  • potassium,
  • magnesium
  • and other nutrients.

Rinds contain a substance called lycopene which is a very important and strong antioxidant and can protect you from various ailments. Peels or rinds also taste great. Well not raw, but in jams, which you can make easily.

Famous watermelon rind jam

Nothing complicated and you only need few ingredients:

  • 600 grams of watermelon rinds,
  • lemon or orange peel,
  • juice from one orange or lemon,
  • 200 grams of granulated sugar.

A quick recipe

First, cut watermelon in half and remove the pulp. Ask your kids to remove the pulp. They will surely enjoy it. Remove the rest of the pulp near the peel with a knife. Cut the pulp into cubes and put it in a pot. Add grated lemon peel, juice and sugar. Mix everything and cover with a lid. Let the mixture sit for about 30 minutes and then put it on the stove and cook for about 40 minutes. When done, use a hand blender and blend everything. Put it back on the stove and cook until you reach the required consistency. When done, pour the mixture into glass jars, seal them and placed upside down. The jam should last a pretty long time.
