Did you run out of gingerbread powder? Here is how to save the situation
A gingerbread powder replacement: Gingerbread is a sweet cake we all love. It is made in various flavours and forms, with or without frosting, with raisins, nuts, jam, marmalade, the options are almost endless. But you need a gingerbread powder to add fluffiness and flavour. But what about if you ran out and your entire family has the cravings for gingerbread? No worries. You can use a replacement.
No need to run to the store
Yes, do not run to the store for just one bag. You may use homemade substitutes which even give you more options as far as flavour is concerned – the spice blend in stores may not always be the one you want.
- Option number 1 : 1 baking powder + 1 teaspoon gingerbread spice
- Option number 2 : 1 tablespoon of soda + 1 teaspoon of gingerbread spice
You will also need 350 – 400 g of flour (2 cups approx. 200 ml)
Gingerbread spice is sold in stores but if you do not have it, make it.

Homemade gingerbread spice
The base is cinnamon but you also need cloves, star anise, allspice, nutmeg, coriander, cardamom or a vanilla pod. Put everything in a mortar and grind well. Run it through a sieve to make fine powder. Spices are mixed in the following ratio:
- 2 tablespoons cinnamon
- 1 tablespoon cloves
- ½ teaspoon allspice
- ½ teaspoon nutmeg
- ½ teaspoon star anise
- ½ teaspoon anise
- ½ tablespoon coriander
- ½ teaspoon cardamom
- ½ teaspoon vanilla bean
- ½ tablespoon ginger
- pinch of pepper
You may omit some spices if you do not like them. These may include nutmeg, ginger, cardamom, or vanilla but you cannot do without cinnamon, cloves, star anise, and allspice.
Now you have the baking powder and gingerbread spice and may start making gingerbread using your favourite recipe. You may do better with homemade gingerbread powder and may even like it better.
