Cucumber lemonade

Cucumbers are sweet, juicy and very refreshing. They can be sweet and salty but always delicious. We all know cucumbers in salty dishes, but there are sweet versions too. Take a cucumber lemonade for example. It has been a very popular drink in many restaurants for years. Unfortunately, the quality is not always what it should be. Let us make a really good one at home using freshly picked cucumbers.

Ingredients:

  • 1-2 cucumbers
  • 1 litre mineral of water, sparkling or still
  • 2 tablespoons of sugar
  • 1 organic lemon
  • crushed ice
  • mint leaves for garnish

Here we go:

Peel one large or 2 smaller cucumbers and cut into thin rounds and set aside. This is for garnish so make only few. Grate the rest of cucumbers into a deep bowl. Carefully peel the lemon skin – make few stripes without the white pulp and then squeeze the entire lemon in the bowl. Add sugar, lemon juice and stir until the sugar dissolves and the cucumber releases juice. Now pour in water in and strain it through a fine sieve. Pour lemonade into a jug or bottle and chill thoroughly. Put the thin cucumber slices, mint leaves and strips of lemon peel into glasses, add a little crushed ice and top up with cold lemonade.

Note:

The more cucumber pulp you use, the more cucumber flavour you get. So, you may have to experiment a bit with the right amount of sugar and lemon juice.

Cucumber lemonade, tailored to your taste, is a perfect summer refreshment drink you are looking for. If you do not want to spend time making fresh lemonade every time you feel like it, make cucumber syrup instead. It lasts for long time in fridge so when you want cucumber lemonade just pour syrup into a glass, add chilled water, and that is it.
