How to freeze cottage cheese
Sometimes you are not able to use all the cottage cheese you bought and of course you do not want to throw it away but can you store it and use it later? Of course you can. You can freeze it for example. If you bought cottage cheese in a plastic container you can freeze it in the original packaging. If you have cottage cheese packed in a tinfoil you can put it in a freezer bag to eliminate odour absorption. When you need it remove it, defrost it and use it just like the fresh product, but you should use it as quickly as possible.
Frozen semi-finished products
You can also freeze cottage cheese dumplings, filled with fruit, jam, or plain and use it when needed.
A simple recipe for cottage cheese dumplings with plums (or other fruit)
Ingredients:
- 500 g cottage cheese wrapped in tinfoil (not in a plastic container), preferably with a higher fat percentage
- 150 g semolina (for children), or coarse flour – the amount largely depends on the consistency of the cottage cheese
- 1 small egg
- approximately 20 large plums
- pinch of salt
- butter to pour over dumplings
- powdered sugar, cinnamon, or other goodies for sprinkling (see below)
Instructions:
Makes the cottage cheese, semolina, egg and salt into a dough, do not knead too long. Let it rest for a while. Take a kitchen roller and roll out of the dough and divide it into about 20 pieces. Form even balls from each peace, flatten them and stretch them into patties. Take each patty in your palm (sprinkle your palm with flower first), place a plum in the centre and use your other hand to wrap it around to make a nice looking dumpling. A good idea is to use gloves because the dough will not stick to your hands so much. You can leave stones inside plums or remove them and put a little bit of sugar inside. Place finished dumplings on a tray and freeze them. When they are hard you put them in a freezer bag and place it back in the freezer.

When you are ready to boil them, take out a large pot and pour water in. Add little bit of salt. Remove dumplings out of the freezer bag and immediately place them in the pot with boiling water. Do not defrost dumplings. Do not put too many dumplings in the water at the same time because you do not want the water to cool down. Cover with a lid and boil. As soon as the water starts boiling, use a spatula to lift dumplings from the bottom. They like to stick to the bottom. Boil gently for about 10 minutes – depending on the size of the dumplings. When done, take out 1 dumpling, cut it open and check if the dough is cooked thoroughly. Put dumplings on a plate and pour melted butter over and sprinkle with powdered sugar mixed with cinnamon, cocoa or nuts. You can also sprinkle with grated cottage cheese and sugar or fried breadcrumbs.
Cottage cheese ice cream
During hot summer everyone likes an ice cream. Today we shall tell you how to make a cottage cheese ice cream. You should definitely try it. You can it when you have a spare time and freeze it for later and when the right moment arrives just remove it from the freezer and enjoy.
Strawberry cottage cheese ice cream
Ingredients:
- 500 g of soft cottage cheese in a plastic container (high or low percentage of fat)
- 1 Salko (sweetened condensed milk)
- 800 g of fresh strawberries
Instructions:
Blend strawberries first. If they are ripe enough you can mash them with a fork. Add cottage cheese, mix well and add the condensed milk at the end. Pour the blended mixture into a container (the mixture will increase its volume slightly when frozen) and seal with a lid. You can also pour it in small bowls or in various moulds and freeze it. It takes about 6 hours to freeze it well. When you are ready, remove it and let it warm up a bit before serving. If you have individual portions, you can eat it straight away. Enjoy.
