Do you love pumpkins and their taste? Well good. Pumpkins, in general, contain lots of vitamins and other substances beneficial to our body. One of the most popular pumpkins is undoubtedly the Hokkaido pumpkin, also called the red kuri squash. It is a round or slightly flattened pumpkin of a deep orange colour. We harvested a huge one this week and made a great pumpkin soup out of it. In the following lines we shall tell you how to grow and harvest Hokkaido pumpkins and of course, you will find a great recipe for a great-tasting pumpkin soup. The recipe is very simple.

Growing Hokkaido pumpkins

It is not difficult at all and that indicates that Hokkaido pumpkins will grow almost anywhere. The ideal soil is a medium-heavy and sufficiently moist soil which should be rich in nutrients. You can provide a highly-nutritious soil by using compost. Sometimes you see Hokkaido pumpkins growing directly on compost! Sowing is usually done in the second half of May. Seeds should go about 3 cm deep. Each seed should be about 1.2 m apart. But careful when sowing or planting and do not put Hokkaido pumpkins near tomatoes, cucumbers or potatoes. Pumpkins may attract unpleasant mould and infect other plants.

A rich harvest

You can harvest several pumpkins from one plant. We had three pumpkins but one was smaller. It depends where you grow it and of course, on watering and fertilization.

With or without skin?

Many growers and chefs recommend preparing Hokkaido pumpkins with the skin because the majority of vitamins live under the skin… However, our recipe requires peeled pumpkins.

A great pumpkin soup

One Hokkaido pumpkin was enough. Clean it thoroughly, peel it and chop it. Boil thoroughly in water. Do not use too much water. When the pieces are soft, blend it and add milk and salt. You also need to make crunchy croutons from an old bread – by simmering croutons on a frying pan.
