Dried carrot and how to use it
If you have a lot of carrots this year or just bought more than you need, you have to store it properly and you have several options. Carrots will last a long time in the fridge. If you blanch carrots briefly, you can freeze it. You can also store carrots in a container with sand (but you need to maintain the correct temperature). Dried carrots are another way you can try.
Blanch before drying
Well, some people blanch some do not… It is an extra step and not everyone see it important. If you use dried carrots within three months, you do not need to blanch them. If you want to store them longer, you should probably blanch. Carrots will retain colour, texture and flavour better. Another benefit of blanching is reduced drying time and subsequent rehydration time. Blanched dried carrots stay fresh longer. Blanching also kills microorganisms that may speed up deterioration.

Preparation for drying
Whether you peel carrots or not before drying is up to you. You will not notice any difference in taste. If you do not peel, wash carrots thoroughly. Cut off the ends and slice carrots into rounds about 3 mm thick.
Blanching
Take a pot of water and bring it to a boil. Add carrots and wait for the water to boil again and cook for 4 minutes (3 minutes is enough if have grated carrots). Drain and submerge carrots in ice water immediately.
Drying carrots
Spread carrots on a tray. Make sure pieces do not touch. If you have grated carrots, spread it around in a thin layer. Dry at 52°C for about 8 to 12 hours. There should be no soft spots in the middle. Cut it in half and check. Let carrots cool thoroughly before storing in airtight jars. Store in airtight containers in a cool, dry and dark place. Use within one year.
Using dry carrots
The most common way people use dry carrots is in soups or stews. You can add other dried vegetables and salt to make your own homemade mix of dry veggies. You can also grind dried carrots to make a carrot powder and add it to a variety of dishes, such as meatloaf, cakes, smoothies, soups, pastries, pancakes, and more.
