Canning in oven?
We all know how to can vegetables, mushrooms or fruit but sometimes you have too much but only one canning pot. So, is there a way to can fruit and veggies without a canning pot? Yes, there is. You can use your oven. We all have oven right? Just kidding!
Few new rules
You can use any oven, even a microwave, to can food. Always choose jars of the same size for one batch. Place jars on a baking tray filled halfway with water. You do not want to damage rubber bands underneath lids. Jars or glasses must have sufficient space between them to allow air flow. The following times and temperatures are estimates only and depend on the type of food and the oven you use.
Different ovens
- Microwave oven – place jars or glasses along the outer edge of the plate (not in the middle). Set the power to 700 W. To calculate the correct time, multiply time by the number of jars. One 300 ml jar or glass needs about 3 minutes, 2 jars for 6 minutes, and so on.
- Conventional and gas oven – Set the temperature to 170 °C and boil for 40-60 minutes – depending on the food. When done, turn off the oven and leave the jars in for another 30 minutes.
- Hot air oven – Set to 150 °C and boil /sterilize for 30-45 minutes. When done, turn off the oven and leave the jars in for another 30 minutes.
You may also use oven to cook or rather bake prune jam. Baked jams are great and save time.

Baked plums
We need
- 2000 g of peeled plums
- 500 g of caster sugar
- 2 tablespoons of vinegar
- 4 tablespoons of rum
- ½ teaspoon of cinnamon
Recipe:
Take a deep baking tray and line it with two layers of baking paper. Place plums on top and pour vinegar over them. Place in oven preheated to 200-250 °C and bake for 20-25 minutes. Do not stir plums during baking. When done, stir plums and sprinkle with a half of the sugar dosage. Continue baking for another 10 minutes. Stir again and sprinkle with the other half of sugar. Bake until you achieve the desired thickness, about 5-10 minutes. Now, stir in the cinnamon and rum and mix well. Pour the hot mixture into jars, turn upside down and let them cool.
