We grilled: Delicious beef meatballs with potatoes
Summer is slowly approaching, and backyard barbecues are in full swing. Of course, it’s beautiful outside, the weather is perfect for it, so it makes perfect sense to whip up some tasty treats on the grill. We decided to make classic meatballs with roasted potatoes. This very simple dish can be prepared in just a few minutes and is definitely worth it. Plus, anyone can make it, since there’s nothing easier.
We used beef, but you can also choose pork or chicken
The choice is, of course, up to each of us. Beef is firmer, but not as fatty as, say, ground pork from the shoulder or flank. You can also choose chicken, which is much lighter, but it’s a bit harder to work with when shaping the meatballs because it sticks together quite a bit.
Just pepper and salt, nothing else
We took the meat out of the plastic tray and placed it on the cutting board. We seasoned it generously with salt and pepper. No other spices are needed. For chicken, use Provençal herbs. We formed nice, firm patties. The best thing to do is take a piece of meat and lightly tap it against the countertop; it flattens slightly and becomes more pliable. The patties themselves are then much easier to form.

Sear on both sides
Once we were done, we heated the grill to about 200 degrees Celsius. The temperature dropped slightly after opening it, but the patties were ready to go on. It sizzled, and they started grilling properly. We grilled them for a few minutes on both sides. More on the longer side than the shorter side. We like our meat perfectly cooked through.
Simple grilled potatoes as a side dish
Nothing could be simpler. Just boil the potatoes in their skins. We used store-bought ones; we happened to find them pre-cooked at the supermarket. So it was practically effortless for us. We just salted them generously after placing them on the grill. They went perfectly with the meatballs. You can see for yourself.
