Nut season is currently in full swing. You probably already have nuts stored at home in crates, or you’re getting ready to harvest them. Whatever your situation, you’ll undoubtedly need to shell the nuts and then store them effectively in some way. In any case, it’s worth knowing a few methods that are effective for storing nuts. We’ll focus specifically on a relatively simple trick that’s a piece of cake. But before that, let’s take a look at the classic ways to store nuts over the winter.

Many people simply freeze their nuts

Many people thoroughly dry walnuts—shell and all—and then shell them. The kernels themselves can be stored in the freezer, where they’ll last a very long time. However, freezing causes the nuts to lose some of their flavor and, to a certain extent, their aroma. It’s a shame, because their unique flavor doesn’t really come through in Christmas cookies or other baked goods. When nuts are dried and put in a bag, they often don’t taste quite right either. They simply lose their aroma over time.

Dry preserving nuts

Nothing could be simpler. This homemade method ensures that the nuts stay in top condition all year round. First, thoroughly clean the shelled nuts, then place them in a preserving jar. Layer as many dried nut kernels as possible in the jar. Then seal the preserving jar. We definitely won’t add any water or brine to them. That would actually do more harm than good. Then we can place the jars of nuts in a pot of steaming water or in a steam oven. We steam them for a few minutes at 80 degrees Celsius until the lids seal. Then we’re all set.

Tip: Crack walnuts without making a mess. All you need is an ordinary glass bottle.

A bay leaf will help

If you’re worried that the walnuts might go rancid—which traditionally doesn’t happen—add a bay leaf. It will ensure that the kernels stay fresh and crisp all year long.
