Buying smoked meats. It’s fairly easy to spot the old ones
Smoked meats are simply a staple of our diet. Many experts consider them unhealthy. But they’re so irresistibly tasty that they inevitably end up in our shopping cart. After all, it’s almost impossible to imagine summer without a little smoked sausage over an open fire or sausages on the grill. And what about a nice barley soup now that it’s fall? It warms you up perfectly. As for smoked ribs, there’s no point in saying more. Eating smoked meats every now and then certainly won’t hurt us. Even plain ham is delicious. But it’s important to choose one at the store that’s guaranteed to be fresh. You can tell quite easily.
A slimy coating is a clear sign of old smoked meats
If you buy a salami that’s slimy on the surface, it’s definitely not worth eating. The same goes for sausages or any other smoked meat. A slimy surface forms on products that are simply no longer fresh. The spoilage process has simply begun.
An unpleasant odor is a red flag
A foul odor is also typical of spoiled smoked meats. Spoiled smoked meats have a classic sour tinge. It’s almost like mold. The smell is strikingly reminiscent of ammonia.

Don’t underestimate your purchase
Traditionally, when buying salami, it was said that it’s much better to have it sliced for you than to buy it pre-sliced. This isn’t a hard-and-fast rule. Some salamis are left open in display cases for as long as several weeks. Ideally, have the salami sliced directly from an unopened piece, or from a piece that has been only partially opened. The worst are the leftover ends of salami sticks.
Tip: A simple guide to smoking meat. We vacuum-sealed it.
Proper storage of smoked meats is important
Undoubtedly. Ideally, you should vacuum-seal the smoked meat you’ve purchased at home. It’s not complicated. Simply remove the sliced salami from its paper or plastic wrapper and vacuum-seal it in your own plastic bag. Vacuum-sealing in containers is also excellent, as it allows you to take out a piece of the smoked meat and then remove the air. Immediately after purchase, smoked meats should, of course, go into the refrigerator. Every moment spent outside of it degrades their quality and freshness.
