Not a single gram of extra fat. Summer potato pancakes just don’t soak up fat

Summer is in full swing, and you want to prepare lighter meals. With some dishes, it’s usually clear from the start that they won’t be very light, but it’s possible to lighten them up fairly easily and prepare them even in this kind of sweltering heat. Potato pancakes are a prime example in this regard. They certainly don’t have to be the traditional kind that leaves your hands completely greasy. We’ll take a look at a light, summer-friendly version—or rather, at some tricks to keep the potato pancakes from soaking up so much fat.

A little alcohol

The first trick for less greasy potato pancakes is to add a little alcohol to the potatoes themselves. The ratio is usually 1 small teaspoon per ¾ kg of potatoes. Traditionally, vodka is used, or some other neutral alcohol that doesn’t have a specific aroma. All the alcohol evaporates during frying, so it definitely won’t be in the dish, and even kids can enjoy the potato pancakes.

Regular vinegar

If you don’t want the potato pancakes to soak up a lot of fat, you can also use regular vinegar. The amount is roughly 1 tablespoon per 1 kg of potatoes. The strongly acidic taste of the vinegar is practically undetectable at this ratio, which is ideal. But the potato pancakes won’t be nearly as greasy.

Breadcrumbs instead of flour

This alternative also results in potato pancakes that are somewhat less greasy and fatty. Breadcrumbs don’t absorb as much fat as flour does. The potato pancakes will also be crispier and definitely won’t be hard to digest, as is the case with flour.

Either a lot of fat or a minimal amount

Nothing in between. If you use a minimal amount of fat, the potato pancakes won’t have anything to soak up. If you use a larger amount, they’ll usually float to the surface and won’t absorb much fat anyway. A pancake that floats to the surface is also crispier.

Draining the fat is a must

Once you remove the potato pancakes from the oil, have paper towels ready. Place them both on the plate where you’ll set the pancakes and on the pancakes themselves. Gently press them down to absorb a large amount of excess fat. Then you can serve the lighter potato pancakes.
