What’s one of your favorite dishes? Many would say a schnitzel with mashed potatoes; others prefer svíčková. But for many of us, a simple homemade roast chicken is enough. Well, simple. You can prepare it so that it tastes truly luxurious. If you manage to roast the chicken so that it’s perfectly juicy on the inside and as crispy as possible on the outside, it’s a perfect delicacy you won’t soon forget. Is your chicken usually rubbery and often dry? You’re probably doing something wrong. That’s why we’re offering you a method that’s guaranteed to work.

Just a few basic ingredients are all you need

You don’t need a lot of different ingredients—the kind you have to buy at specialty stores—to make a perfectly roasted chicken. Here’s what we needed:

– 1 chicken,

– 5 tablespoons of mayonnaise,

– 5 tablespoons of tomato paste,

– a teaspoon of salt,

– pepper,

– 3 tablespoons of canola oil.

How to prepare the chicken before roasting?

First, wash the chicken, remove the tips of the wings, and clean it thoroughly. However, it’s usually already prepared when you buy it from the store. Then cut the chicken into quarters. In a bowl, mix together the oil, pepper, and salt. Coat the chicken pieces thoroughly in this mixture. Then arrange them on a baking sheet lined with parchment paper.

Tip: Barbecue magic. We made a fragrant herb seasoned chicken steak.

First phase of roasting the chicken

Before placing the chicken in the oven, make several slits in each piece with a knife. Then roast the chicken quarters in the oven at 250 °C. The pieces should spend about 20 minutes in the oven. They’ll brown slightly on the surface, which is perfectly fine.

Second phase of roasting the chicken

After removing the meat from the oven, brush it with a mixture of mayonnaise and tomato paste. Each piece should be completely covered with the mixture. Then reduce the temperature to about 180 °C and roast for another 40 minutes. The chicken will then be perfectly golden, just the way we want it.
